Ingredients

1 cup unsalted butter, room temperature
1 ¾ cups powdered sugar, divided
1 ½ tsp. vanilla extract
2 ¼ cups all-purpose flour
1 cup dry roasted peanuts, finely chopped
½ cup powdered peanut butter, such as PB2
½ tsp. table salt

Instructions

1. Use a stand mixer fitted with paddle attachment or a hand mixer, beat butter on medium speed until smooth and creamy.
2. Add ¾ c. powdered sugar and vanilla, and beat on medium speed until well combined, scraping bowl down as needed.
3. Slowly add flour, mixing on low speed until combined. Once flour is incorporated, increase speed to medium to bring the dough together.
4. Add finely chopped peanuts and mix on medium speed to combine.
5. Cover and refrigerate dough 30-60 minutes.
6. When ready to bake, line 3 baking trays with parchment paper. Preheat oven to 350°.
7. In a shallow bowl, whisk together 1 cup powdered sugar, powdered peanut butter and salt.
8. Use a small cookie scoop or a tablespoon to portion dough evenly. Roll into balls, then place on baking sheet about 2-inches apart.
9. Bake 10-12 minutes or until edges and bottoms are very slightly brown and tops are just barely browned.
10. Cool on rack for 5 minutes, then roll in powdered sugar and powdered peanut butter mixture. Return cookies to rack to cool completely.
11. When cookies are completely cool, re-roll in powdered sugar and peanut butter powder mixture.
12. Serve and enjoy. Just like a Georgia snowball, these cookies don’t stick around long!
