“Peanut Butter is one of my favorite ingredients and most people don’t try using it in different ways. I created this delicious recipe coating chicken with peanut butter and wrapping it in bacon for the grill or air fryer. The family absolutely loved it. But then, we love anything with peanut butter.”

Ingredients

(The ingredients listed is for 2 servings, but can easily be doubled or tripled)

¼ cup smooth, crunchy or natural peanut butter
½ teaspoon ground ginger
6 Chicken Tenders
6 slices bacon
2 packages of chicken flavored ramen noodles, do not use spice package
1 cup chicken broth
1 teaspoon sriracha sauce (add more to your heat level)
1 tablespoon sesame oil
1 tablespoon oyster sauce
1 tablespoon teriyaki sauce
2 tablespoons chopped peanuts
2 tablespoon chopped scallions

Instructions

Preheat grill or air fryer to medium heat.

Place peanut butter in a shallow dish and microwave until soft, approximately 20 seconds. Mix in ginger. Coat chicken tenders in peanut mixture and wrap one slice of bacon around each tender, secure with a toothpick.

Grill or air fry chicken tenders until bacon is crisp and chicken juices run clear. Remove from grill or air fryer and let rest while you prepare the noodles. Remove the toothpicks.

In a medium sauce pan, heat chicken broth to slow boil, add ramen noodles and simmer for 3-4 minutes. When noodles are soft, stir in sriracha sauce, sesame oil, oyster sauce, and teriyaki sauce.

Divide noodles between two bowls. Top each bowl with three chicken tenders. Sprinkle each bowl with chopped peanuts and chopped scallions. ENJOY!
