“My Dad loved making chocolate covered pretzels every Christmas season. I can remember him sitting at our kitchen counter dipping pretzels while my Mom and I made cookies. We baked a lot of cookies to share with family and friends, and my favorite cookie was always peanut butter. I combined these two holiday memories to create my Peanut and Chocolate Pretzel Rods recipe. I wish my parents were still around to enjoy this holiday treat, but in the spirit of the season, I will be sharing my homemade treats with friends and family.”

Ingredients

1 cup semi-sweet chocolate chips
½ cup creamy peanut butter
12 oz. bag pretzel rods
1 cup (approx.) dry roasted peanuts, chopped

Instructions

1. Line two sheet pans with wax paper. Add chopped peanuts to a plate.
2. Add chocolate chips and peanut butter to a medium sized, microwave-safe glass bowl. Microwave on high for 1 minute, stir with silicone spatula. Microwave 20 seconds, and stir until smooth and melted.
3. Dip one end of a pretzel rod in melted chocolate peanut butter mixture, letting excess mixture drip back into the bowl.
4. Roll in chopped peanuts. Place on wax covered sheet tray, spacing them so they don't touch.
5. Repeat and dip all the pretzels. Refrigerate to set, 20-30 minutes.
6. Package in treat bags, tins, or festive jars to share with friends.

Notes

Cook’s Note: If you have leftover melted chocolate and peanut butter, stir in some dry roasted peanuts, and drop by the spoonful for a delicious bonus treat.
