Set aside. In a small bowl, whisk together peanut butter, hoisin sauce, and garlic. Set aside. Heat oil in a wok over medium-high heat. Add vegetables. Cook, stirring frequently, until tender, about 3 – 4 minutes Stir in noodles and sauce mixture. Sprinkle with peanuts and lemon pepper. Garnish with mint and serve.
