Peanut Butter Garlic Noodles

8 oz. spaghetti noodles
3 tablespoons peanut butter
2 tablespoons hoisin sauce
1 tablespoon minced garlic
1 tablespoon olive oil
1 cup sliced carrots
1 cup sugar snap peas
1/4 cup roasted peanuts
1 teaspoon lemon pepper seasoning
2 tablespoons fresh chopped mint leaves


  1. Cook pasta in a large pot of boiling, salted water according to package instructions and drain well. Set aside.
  2. In a small bowl, whisk together peanut butter, hoisin sauce, and garlic. Set aside.
  3. Heat oil in a wok over medium-high heat. Add vegetables. Cook, stirring frequently, until tender, about 3 – 4 minutes
  4. Stir in noodles and sauce mixture. Sprinkle with peanuts and lemon pepper. Garnish with mint and serve.
