Ingredients

Fish of Choice
Peanut oil for cooking
Beurre Blanc sauce for serving, if desired

Peanut Glaze
1 cup creamy peanut butter
½ cup soy sauce
water (enough to thin glaze out)

Peanut Crust
2 teaspoons herbs of choice
1 cup bread crumbs
1 cup peanut flour

Instructions

  1. For Peanut Glaze: whisk peanut butter & soy sauce together in a small bowl. Slowly add water
    until desired consistency is reached.
  2. For Peanut Crust: combine herbs, bread crumbs, and peanut flour in a shallow dish.
  3. Evenly coat fish in peanut glaze, then in peanut crust.
  4. Heat small amount of peanut oil in a skillet until hot. Cook fish on stovetop until peanut crust is
    golden brown.
  5. Plate and top with a beurre blanc sauce, if desired.
