Magic Crust Peanut Pie

20 Ritz crackers, crushed fine
1 cup sugar, divided
3/4 cup roasted peanuts, chopped
3 eggs whites
1 teaspoon vanilla
 tsp cream of tarter
whipped cream
shaved unsweetened chocolate



  1. Preheat oven to 350 degrees.
  2. Combine crackers, peanuts and 1/2 cup sugar. Set aside. Beat egg whites , vanilla, and cream of tarter - gradually adding remaining cup of sugar - until stiff peaks form.
  3. Fold the cracker/peanut mixture into egg white mixture. Pour into a pie pan and bake for 25 minutes. The pie will form it's own crust like magic!
  4. Cool completely.
  5. To serve, top with whipped cream and garnish with shaved chocolate.
