Ingredients

For Peanut Sauce:
1 tablespoon peanut oil
1 small of 1/2 large onion, diced
2 garlic cloves, minced
3 birds-eye peppers, sliced
1/2 tablespoon soy sauce
2 1/2 tablespoons thick soy sauce
1 cup coconut milk
1/2 cup peanut butter

Additional Ingredients:
Chicken skewers
Scallions
Chopped peanuts
Jalapeños
Lime wedges

Instructions

  1. Heat oil in a medium saucepan.
  2. Sauté onion, garlic and peppers briefly before adding in soy sauces, coconut milk and peanut butter.
  3. Stir ingredients together until blended.
  4. Using an electric mixer, mix the ingredients in the saucepan until thick and creamy.
  5. Plate sauce with grilled chicken skewers and top with scallions, peanuts, jalapeños and lime wedges.
