Ingredients
1/2 teaspoon minced garlic
1 tablespoon soy sauce
1 tablespoon rice vinegar
2 tablespoons honey
1/4 cup creamy peanut butter
1/4 cup plain Greek yogurt
3 cups (16 ounces) shredded skinless rotisserie chicken breast
1 cup shredded carrots
1/2 cup diced red bell pepper
1/2 cup golden raisins
1/4 cup chopped green onions
1 tablespoon chopped cilantro
6 cabbage leaves
1/4 cup crushed peanuts, for garnish
1 lime, juiced
Instructions
- In a small bowl, stir together garlic, soy sauce, rice vinegar, honey, peanut butter & yogurt.
- In a separate bowl, toss together chicken, carrots, bell pepper, raisins, onions, & cilantro.
- Pour dressing over chicken mixture, and toss gently to coat.
- Serve chicken salad in cabbage leaves & tip with crushed peanuts and a squeeze of fresh lime juice.
