Ingredients

1 lb ground beef

1/2 cup peanut butter

1/4 cup hot pepper jelly

1 tsp garlic powder

1/2 tsp smoked paprika

1/2 tsp chili powder

4 large flour tortillas

2 cups sharp cheddar cheese, shredded

black bean and corn salsa, for topping

hot sauce, for drizzle

sour cream, for drizzle

cilantro, chopped, for garnish

Instructions

Heat a large nonstick skillet over medium heat until hot. Add ground beef and cook 8 to 10 minutes or until browned, breaking into crumbles and stirring occasionally. Drain excess fat.

Stir in peanut butter, pepper jelly, garlic powder, paprika, and chili powder.

Lay out tortillas, spoon the beefy filling onto one half, sprinkle with cheese, fold, and lightly press.

Heat a frying pan or griddle on medium high heat. Toast both sides of each tortilla until golden brown and crispy.

Slice into triangles and arrange on a serving tray. Top with salsa and drizzle with hot sauce and sour cream. Sprinkle with chopped cilantro
