Ingredients

3 tbsp olive oil, divided
1 medium yellow onion, chopped
salt, to taste
2 garlic cloves, minced
2 tbsp red wine vinegar
¼ cup creamy peanut butter
1 tsp sriracha
¼ cup peanuts, chopped, plus more for topping
black pepper, to taste
1 large bag tortilla chips (about 11 oz)
1 cup red pepper jelly
10 oz brie cheese, rind removed and cubed
½ cup baby arugula, chopped
½ tsp dried rosemary

Instructions

Preheat oven to 450. Line a large baking sheet with foil.

Heat 1 tbsp of oil in a skillet over medium heat. Add the onions and season with salt. Cook for 4 minutes or until slightly softened. Add the garlic and cook for 2 minutes, stirring occasionally.

In a small bowl whisk together the vinegar, 2 tbsp oil, peanut butter, sriracha and 1/4 cup chopped peanuts. Season with salt and black pepper.

Arrange tortilla chips on the foil lined baking sheet. Drizzle the red pepper jelly over the tortilla chips, then top with the cooked onions and brie cheese. Bake for 5 minutes or until the cheese is melted.

In a bowl add the arugula and toss with the vinegar mixture. Top tortilla chips with the arugula mixture, chopped peanuts and sprinkle with the rosemary.
