Ingredients

2 pounds frozen 1 inch meatballs ( beef or chicken)
1/2 cup broth ( beef or chicken to match meat)
1/4 cup smooth peanut butter
1 tablespoon soy sauce
2 tablespoons Sweet Chili Sauce/ marinade
2 tablespoons brown sugar
1 tablespoon vegetable oil
3 tablespoons finely chopped peanuts
1 green scallion thinly sliced

Instructions

Place meatballs in a slow cooker/ crockpot
Combine the broth,peanut butter,soy sauce , Chili sauce , sugar and oil in a small blender and pulse til smooth. ( or whisk together in a bowl).
Pour mixture over the meatballs.
Turn pot on high for 3-4hours or low 5-7 hours.
Stir every hour to coat.

To serve place in a bowl, garnish with peanuts and scallions.
Toothpicks or small forks on the side!

Note: vegetarian meatballs with veggie broth would work too!
