In a medium bowl, mix all the wet ingredients until well incorporated and smooth. Make a well in the middle of the bowl, and pour in the wet ingredients mixture. Mix until the pancake batter until smooth, being careful not to over mix. Heat a non-stick griddle or large pan over medium-high heat. Once the pan is hot, melt butter on the hot surface. If you're using an electric griddle, heat it somewhere between 300 and 350 F. Pour ¼ cup of pancake batter onto the greased pan. Cook the pancakes for about 2-3 minutes, until the edges begin to look defined and bubbles form. Flip the pancakes over and cook for another minute or two on the other side. Avoid pressing down on the pancake after flipping; this will cause denser and chewy pancakes and undercooked batter. Remove the pancakes from the pan onto a plate and keep them warm under aluminum foil, or in an warm oven while you cook the rest of the batter. Serve peanut butter pancakes with warm organic syrup, or your favorite toppings, and enjoy!
