Ingredients

2 slices bread of choice ( I used scali)
1 1/2 tablespoons smooth peanut butter
2 thin slices of peeled apple , cut into matchsticks
1 slice cooked bacon, chopped
1 tablespoon softened butter
1/2 teaspoon cinnamon sugar ( optional but nice)

Instructions

Preheat griddle (or heat pan)

Spread each inside slice of bread with the peanut butter.
Layer on one slice the apple sticks.
Sprinkle with bacon.
Sprinkle on cinnamon sugar if wanted.
Top with second slice of bread.
Coat each side of sandwich with butter.
Grill sandwich until golden brown.

Remove and slice.
Serve with extra apple if you choose.
Yield 1 sandwich.
Easily doubled or tripled!
